  • Brooke's Chocolate Almond Silk Pie

    Ingredients

    • 1 c. flour
    • 1/4 c. almonds, toasted & finely minced
    • 1/4 tsp vanilla
    • 6 Tbsp. sugar
    • 3 Tbsp. powdered sugar
    • 3/4 c. butter, softened
    • 1 c. sugar
    • 3 sqr unsweetened chocolate (1 ounce. each) melted & cooled
    • 1/2 tsp almond extract, Or possibly
    • 3 Tbsp. almond liqueur
    • 3 x Large eggs sweetened whipped cream toasted almonds

    Directions

    1. Combine all crust ingredients and blend well in food processor on low speed (2-3 min). Press on bottom and sides of pie dish (9"). Bake at 400 degrees for 8-10 min. Cold.
    2. For filling, combine butter and sugar in small mixing bowl, beating at medium speed till light and fluffy. Add in chocolate and almond liqueur or possibly extract, and beat till well-blended. Add in Large eggs one at a time, beating 2 min after each addition. Spoon filling into cooked crust. Chill till hard (3-4 hrs). Garnish with whipping cream neatly around edges.
    3. Sprinkle with sliced almonds. Keep refrigerated. This is heavenly!
