Broiled Chicken With Avocado Salsa
Ingredients
- 1 med. size ripe avocado
- 1 med. tomato, diced
- 1 green onion and top, chopped
- 1 T chopped cilantro
- 3 T naturally brewed low sodium soy sauce, divided
- 1 teaspoon lemon juice
- 1/8 teaspoon warm pepper sauce
- 4 chicken breast halves, boned
- 1 clove garlic, pressed
Directions
- Cut avocado in half; throw away seed and peel. Coarsely mash avocado; gently put together with tomato, green onion, cilantro, 1 tbsp soy sauce, lemon juice, and hot pepper sauce. Cover and set aside.Place chicken breast, skin side down, on rack in broiler pan. Put together remaining soy sauce and garlic; brush chicken with half of mix. Broil 4 inches from heat for 7 min. Turn chicken over; brush with remaining soy sauce mix. Broil 7 min longer, or possibly till tender. Serve with avocado salsa.
