Broiled Cheddar And Egg Salad Buns

  • 8 x Large eggs, Lg,HardCooked, Minced
  • 2 c. Cheddar, Sharp, Shredded
  • 1 c. Green Bell Pepper, Minced
  • 2/3 c. Lowfat milk, Evaporated
  • 1 1/2 tsp Salt
  • 1/4 tsp Pepper
  • 3 x Sandwich Buns Or possibly Rolls, *
  • 3 Tbsp. Onion, Grated
  • 3 Tbsp. Mustard, Prepared


  1. The buns or possibly rolls should be split, toasted and buttered.
  2. Combine the Large eggs, cheddar, green pepper, onion, evaporated lowfat milk, mustard, salt and pepper. Spread each bun with about 1/4 c. of the egg mix. Broil about 5 inches from the heat source till warm and cheese is melted, about 5 min.
  3. Serve warm.
