Broccoli Salad With Walnut Oil Dressing

Ingredients

  • 1 kg brocolli
  • 1/2 c. walnuts
  • 1 x red capsicum
  • 1 x egg yolks
  • 1 tsp garlic, crushed
  • 1 tsp mustard, whole grain
  • 1/2 c. white wine vinegar
  • 1 Tbsp. sherry vinegar
  • 1 Tbsp. lemon juice
  • 1 tsp sugar (caster) salt, pepper
  • 1 c. walnut oil
  • 1 Tbsp. walnuts

Directions

  1. Cut brocolli into flourets.
  2. Plunge broccoli into a large pot of boiling water and cook till tender and bright green.
  3. Drain and run under cool water to cold and preserve colour. Drain well.
  4. Cut capsicum into thisn strips.
  5. Toss brocolli with capsicum, dressing and walnuts, heap into a salad bowl and serve.
  6. Dressing:Place all ingredients except walnut oil in a bowl and whisk well.Gradually whisk in walnut oil in a thin stream.
  7. Dressing should be creamy. Add in finely minced walnuts.
