  • Broccoli Salad With Pine Nuts

    Ingredients

    • 1 bn broccoli
    • 1/2 x red onion
    • 1 c. shredded cheese as much as you like
    • 1 lb crisply cooked bacon*
    • 1 pkt pine nuts
    • 1/4 c. mayonnaise to taste vinegar sugar

    Directions

    1. * To make the recipe easier and quicker, I microwave my bacon
    2. Cut broccoli into bite size pcs. Chop onion. Add in cheese. Crumble bacon into bite size pcs. Add in Pine nuts.
    3. As I make the dressing I don't follow the recipe as it was given to me. I go strictly by taste. The original amount of sugar was way too much, and not sufficient vinegar. So go by how you would like it to taste. I usually start with about a teaspoon of sugar and go from there. Then add in vinegar to taste and to thin out the dressing. This is a great salad and can be made up to a day ahead and still be awesome, or possibly eat it right away. The Pine nuts add in a great contrast in crunchiness. Always a big hit.
