This is really easy to make the night before and even easier if you buy the pre-cooked bacon. The most time it takes to put this recipe together is what time it takes to clean and chop your veggies.
With this combination of ingredients, you will never miss the sugar or the dried cranberries. The salty, crisp cooked bacon, cheese, sweet and hot peppers bring together that satisfaction that will make this your new favorite summer dish!
I like to make this the day before we are actually going to eat it. That doesn’t guarantee I will be able to keep my spoon out of the bowl though. It is that addicting! Anyway, make it the night before to give the flavors time to come together.

3 small scallions, sliced
8 slices pre-cooked bacon slices, chopped
1 cup mayonnaise
2 tablespoons apple cider vinegar
