Broccoli 2/3 cup pp
- 36 qts water
- 120 pounds broccoli,frozen
- 3/4 cup salt
- Bring water to a boil in a steam-jacketed kettle or stock pot.
- Add salt.
- Add broccoli; stir well. Return to a boil; cover.
- Reduce heat; cook broccoli for 6 to 8 minutes.
- Place broccoli in serving pan.
