  • Broad bean salad with grilled Haloumi from Denis Cotter

    If you love spring's offering of Broad bBans (or Fresh Fava as they are also called), try this. The lemon thyme may be hard to find, I use garlic chives and extra lemon, or any combo I can think of that seems to fit.Wild garlic could be ramps or what ever seems fitting

    Ingredients

    • 2 oz Italian Bread
    • 200 mls olive oil
    • juice of one lemon
    • rind of one lemon
    • 2 sprigs fresh lemon thyme
    • 300g Broad beans (fresh Favas)
    • Wild garlic
    • 240g Haloumi cheese
    • salad leaves

    Directions

    1. Spread oil on bread slices and bake at 350 until crisp all the way through and browned
    2. Blend the rest of the oil with the lemony things ( including thyme or lemon thyme) and emulsify for vinaigrette
    3. Cook the shelled beans in boiling wateruntil just tender, about 3 minutes. Rinse to cool enough to handle -- not cold --and remove skins. Place in bowl
    4. Chop garlic (wild or garlic chives, oir young regular garlic to taste)
    5. and add to beans in bowl
    6. Heat grill pan or griddle and grill oil brushed cheese, which has been sliced and each sliced halved on diagonal, until nicely browned and beautiful with grill marks on both sides
    7. Add cheese to bowl and toss in the crisp bread, torn into chunks roughlyhalf the size of the cheese slices
    8. Mound salad leaves on plates and spoon the delicious cheese and beans and bread atop them. Salt and pepper as needed.
    9. Sit back. Enjoy spring.
