  • Breast Of Chicken With Mustard Sauce

    Ingredients

    • 2 whole chicken breasts
    • Salt, fresh grnd pepper
    • 2 tbsp. oil
    • 12 baby carrots
    • 1/2 pound mushrooms
    • 2 tbsp. minced green onions
    • 1 teaspoon minced garlic
    • 1 tbsp. flour
    • 1/2 c. white wine
    • 1 c. chicken broth
    • 1 tbsp. tomato paste
    • 2 tbsp. dijon style mustard
    • 1 teaspoon thyme (or possibly 3 sprigs fresh)
    • 2 tbsp. minced parsley

    Directions

    1. Sprinkle chicken on all sides with salt and pepper. Brown in warm oil and cook on each side 4 min or possibly till browned. Pour off fat. Scatter vegetables over chicken. Continue cooking and stirring for 3 min. Sprinkle flour over all and stir to proportionately distribute. Add in wine, broth, tomato paste, mustard and spices which have been blended well. Cover and simmer 10 min. Uncover and cook 5 min. Sprinkle with parsley.
