Breakfast Potatoes w/ Peppers and cheese
Ingredients
- 100 pounds potatoes, cubed frozen
- 10 pounds ham, diced
- 11.25 pounds onions, chopped
- 11.25 pounds green peppers, chopped
- 4.5 pounds red pepper, diced
- 2.25 pounds jalepeno, diced
- 4 1/2 cups vegetable shortening
- 3/4 cup salt
- 3 tablespoons cayenne pepper
- 1/2 cup paprika
- 9 pounds cheddar cheese, shredded
Directions
- Saute ham, onions and peppers in 1/4 of shortening until tender.
- Cool 10 min.
- Add to potatoes along with seasonings and mix well.
- On a griddle cook potatoes in remaining cooking oil until browned, turning to brown on both sides.
- Place half of the potatoes on a platter, top with cheese and remaining potatoes.
