Breakfast Mini Frittatas
These mini frittatas are a perfect on the go breakfast to make ahead and keep in the fridge for running out the door. They are healthy, tasty and convenient. Ingredients
- 6 eggs
- 2 egg whites
- 1/2 c. whole milk
- 1 cup cheddar cheese (or reduced fat cheese if preferred)
- 1/2 yellow onion
- 14 oz breakfast lean sausage patties (turkey if preferred)
- 1/4 t. salt
- 1/4 t. pepper
Directions
- Preheat your oven to 350. Beat the eggs and half and half together. Saute your yellow onion in a spray coated nonstick pan over medium heat until soft and translucent. Add cooled onions to egg mixture. Stir in cheese. Line a muffin tin with cupcake liners and place one sausage patty on the bottom of each liner. Ladle in the egg mixture, 3/4 full. Bake for 30 minutes in a 350 degree oven.
