    Ingredients

    • 1 (12 ounce.) roll Jimmy Dean extra mild pork sausage
    • 2 tbsp. butter
    • 1 tbsp. oil
    • 2 med. shallots, finely minced
    • 8 ounce. fresh mushrooms, thinly sliced
    • 2 sm. zucchini, thinly sliced
    • 1 clove garlic, chopped
    • 1/2 teaspoon salt
    • 1/4 teaspoon pepper
    • 12 lg. Large eggs
    • 1 1/2 c. shredded med. cheddar cheese
    • 2 med. tomatoes, sliced
    • Lowfat sour cream

    Directions

    1. Slice sausage, cook in medium skillet till done. Remove and drain on paper towel. Heat butter and oil in a non-stick 12 inch skillet. Add in shallots, mushrooms, zucchini, and garlic. Saute/fry till tender, about 5 min. Add in cooked sausage. Whisk Large eggs, salt, and pepper in mixing bowl till blended. Stir in all but 1/4 c. of the cheese.
    2. Pour over vegetables in skillet. Cook stirring occasionally, over medium heat till bottom of mix is slightly set. Arrange tomato slices on top and sprinkle with remaining cheese. Place skillet in oven and bake at 425 degrees for 15 min, till puffed and brown. Slide out of pan onto large platter. Slice like a pie and serve with lowfat sour cream on the side.
