  • Bread And Butter Pudding

    Ingredients

    • 8 slices hard white bread
    • 2 tbsp. room temp. butter
    • 1/4 c. raisins
    • 2 Large eggs
    • 1/2 c. sugar
    • 1 c. lowfat milk
    • 1 c. heavy cream
    • 1/4 teaspoon vanilla
    • 1/4 teaspoon cinnamon

    Directions

    1. Butter a 1 1/2 qt baking dish. Butter each slice of bread using 2 Tbsp. butter in all. Stack 4 slices of bread cut into 3 rectangles. Repeat with remaining bread. Line prepared dish with half of the bread. Sprinkle with half of raisins. Arrange remaining bread on top.
    2. Beat Large eggs and sugar till light and lemon colored. Gradually beat in lowfat milk, cream, vanilla, and the 1/4 tsp. cinnamon till sugar dissolves. Slowly pour custard over bread. Gently press bread into custard. Sprinkle top with remaining raisins and a healthy pinch of cinnamon. Let stand 20 min. Heat oven to 325 degrees. Put baking dish in roasting pan, fill pan halfway with water. Bake about 1 hour. 6 servings.
