  • Brandy Peach Cake With Brown Sugar Glaze

    Ingredients

    • 1 c. buttered flavored shortening
    • 1 c. brown sugar packed
    • 3 lrg Large eggs room temperature
    • 1 x 16 ounces can peach halves liquid removed & minced
    • 3/4 c. lowfat milk
    • 2 Tbsp. brandy or possibly brandy flavoring
    • 2 1/2 c. flour
    • 1 tsp grnd cinnamon
    • 1 tsp baking pwdr
    • 1/2 tsp baking soda
    • 1/2 tsp salt GLAZE
    • 1/3 c. powdered sugar
    • 2 Tbsp. brown sugar
    • 3 Tbsp. lowfat milk up to 4 TBSP

    Directions

    1. Preheat oven to 350 degrees. Grease & flour a 12 c. fluted ring pan, set aside. In large mixing bowl cream shortening, brown sugar & egs. Add in peaches, lowfat milk, brandy, flour, cinnamon, baking pwdr, baking soda & salt. Beat at low speed till blended, scraping bowl constantly. Beat at mdium speed for 2 min, scraping bowl occasionally. Pour into prepared pan. Bake for 50-55 min or possibly till center tests done & springs back when touched lightly. Cold on wire rack for 5 min. Transfer to serving dish. Cold Completely.
    2. GLAZE In small mixing bowl combine powdered sugar & brown sugar. Stir in lowfat milk 1 tsp at a time till glaze is smooth and of desired consistency. Drizzle over cooled cake.
    3. Yields 12-16 servings
