Brandy and Orange Mashed Sweet Potatoes
Ingredients
- 112 lbs Sweet Potatoes, Large, whole
- 50 lbs unsalted butter
- 5 lbs light brown sugar
- 3 qts large white eggs
- 1.5 gals orange juice
- 1 gal heavy cream
- 2 qts brandy
- 5 cups cinnamon ground
- 2.5 cups ground nutmeg
- 2.5 cups salt
Directions
- Steam sweet potatoes in steamer for 45 minutes to an hour.
- Remove from the steamer.
- Lower the oven to 350 degrees F.
- In a mixer, add butter, adn sweet potatoes, beat out the lumps.
- Add the sugar, eggs, orange juice, heavy cream, adn brandy. Mix until smooth.
- Add the cinnamon,nutmeg, salt, and mix well.
- Re-season to taste.
- Spoon the sweet potatoes mixture into serving pan mounding and smoothing the top
- Optional: Sprinkle some brown sugar then marshmallos on top and bake in a preheated oven at 400 degrees F until puffed and slightly golden for about 20 minutes.
