Ingredients

  • 1/2 c. Nonfat Veg Chicken Broth, Low Sod Or possibly Nonfat Chicken Broth
  • 3 x Cloves Garlic Thin Slice
  • 1 lb Romaine Lettuce Leaves Note 1
  • 1/4 tsp Salt
  • 1/4 tsp Pepper
  • 16 ounce White Beans Drain, Rinse
  • 1 1/2 c. Coarsely Minced Tomatoes

Directions

  1. Serves: 4
  2. Prep Time: about 15 minutes
  3. Cooking Time: about 10 in
  4. Note 1: stack leaves and slice crosswise into 1/2" wide strips (10 C)
  5. In large skillet, bring broth and garlic to a boil. Reduce heat, cover and simmer 4 - 5 minutes, or possibly till garlic is tender.
  6. Add in lettuce, salt and pepper. Cover and cook over med-high heat, stirring often, 4 - 6 minutes, or possibly till wilted and tender.
  7. Add in beans and minced tomato. Stir 2 minutes, or possibly till warm. Remove from heat and serve immediately.
