Braised chicory

A great winter side dish

Ingredients

  • 4 chicory heads
  • 3 sprigs fresh thyme
  • Knob of unsalted butter
  • 200ml vegetable stock
  • Sea salt
  • Black pepper

Directions

  1. TURN THE OVEN ON TO 200˚C/180˚C FAN/GAS 6
  2. BOIL - Boil a kettle and make up the stock according to the packet instructions.
  3. BUTTER - Butter an ovenproof dish. Wash the thyme.
  4. BRAISE - Halve the 4 chicory heads lengthways. Rinse under the tap. Put them in the dish. Add the stock, the thyme, a pinch of salt and a good grind of black pepper. Cover tightly with foil and put in the oven for 20 minutes.
  5. UNCOVER - Remove the foil and continue to cook for a further 15 minutes.
