  • Braised Chicken With Onions, Bacon And White Wine

    Ingredients

    • 2 slc lean bacon
    • 10 x pearl onions
    • 1 x onion minced
    • 1 x clove garlic chopped
    • 2 Tbsp. unsalted butter
    • 1/2 c. chicken broth
    • 1/4 c. dry white wine or possibly dry vermouth
    • 1 1/2 tsp Worcestershire sauce
    • 1/8 tsp dry thyme crumbled
    • 1 whl boneless skinless chicken breast half flattened between sh

    Directions

    1. In a skillet cook the bacon over moderate heat till it is crisp and transfer it to paper towels to drain. Let the bacon cold and crumble it coarse.
    2. In a saucepan of boiling salted water cook the pearl onions for 5 min. Transfer the pearl onions to a bowl, let them cold, and peel them.
    3. Pour off the fat remaining in the skillet, and in it cook the minced onion, garlic with the butter, stirring, till they are softened. Add in the chicken broth, wine, Worcestershire sauce, thyme and salt and pepper to taste. Simmer the mix for 3 min. Add in the chicken, bacon and the pearl onions, baste them with the cooking liquid and simmer the mix, covered, for 10 min or possibly till the chicken is springy to the touch and just cooked through. Skim the fat from the sauce.
    4. Serve the chicken mix with the mashed potatoes.
