  • Boysenberry Struesel Muffins

    Ingredients

    • 1 1/2 c. Flour
    • 1/2 c. Sugar
    • 2 tsp Baking pwdr
    • 1/2 c. Lowfat milk
    • 1/2 c. Butter, melted
    • 1 lrg Egg, beaten
    • 1 c. Boysenberries, frzn or possibly fresh, divided
    • 1/4 c. Pecans, minced
    • 1/4 c. Brown sugar, packed
    • 1/4 c. Flour
    • 2 Tbsp. Butter, melted

    Directions

    1. In a large bowl, combine flour, sugar and baking pwdr. Beat together lowfat milk, cooled melted butter and egg, and add in to flour mix, stirring just till moistened.
    2. Spoon about 1 Tbsp. of batter into each greased or possibly paper-lined c. of 12-muffin tin. Divide half of the Boysenberries among the c., top each with remaining batter, then add in remaining Boysenberries.
    3. For topping, combine pecans, brown sugar, flour and butter. Sprinkle over batter and bake in 350 oven for 20-25 min, or possibly till toothpick inserted in middle comes out clean
