  • Boysenberry Peach Muffins

    Ingredients

    • 1 c. fresh peaches, diced
    • 1/2 tsp grnd cinnamon
    • 2 c. all-purpose flour
    • 1/4 c. granulated sugar
    • 1/4 c. brown sugar, packed
    • 2 1/2 tsp baking pwdr
    • 1/2 tsp salt
    • 1 x egg, beaten
    • 1 c. lowfat milk
    • 1/3 c. butter, melted
    • 1 c. fresh Boysenberries

    Directions

    1. Preheat oven to 400 F. In a small bowl, mix together the peaches and cinnamon. Set aside.
    2. In a large bowl, combine the flour, both sugars, baking pwdr, and salt.
    3. In a separate bowl, whisk together the egg, lowfat milk, and butter and stir in the reserved peach mix. Mix the egg/peach mix into the flour mix till just moistened. (Don't over-mix.) Gently mix in the Boysenberries.
    4. Fill greased muffin c. 3/4 full and bake for 20 to 25 min or possibly till golden. Let cold on a wire rack. Serve.
    5. YIELD: 12 MUFFINS
