Bow Tie Pasta Casserole with Corn Bread Baked Topping

Ingredients

  • 8 ounces Bow Tie Pasta
  • Salt for boiling pasta water
  • 8 ounces Ground Beef
  • 1/4 diced onion
  • 1/4 diced green bell pepper
  • 22 ounce Jar Tomato Sauce (Your favorite)
  • I cup Cornmeal
  • 1/2 Cup Self Rising Flour
  • 1 large beaten egg
  • 2 tablespoon melted butter
  • pinch of Iodized Salt

Directions

  1. Pre Heat Oven 375 F
  2. Boil bow tie pasta to al dente, rinse, set aside
  3. In a skillet add onions, peppers, ground beef and saute until browned, remove excess grease, Add tomato sauce and stir well, salt and black pepper to taste, cover and cook on low 10 minutes
  4. In a mixing bowl add cornmeal, flour, egg, butter and salt, stir (do not over mix batter) it will be slightly thick and you want it that way
  5. In a baking dish add Bow Tie pasta and sauce, spread out evenly add cornmeal batter on top with an offset spatula carefully, place into the oven and bake for 20-22 minutes or until corn bread is golden in color
  6. Serve and enjoy!
  7. We love this with a garden or Greek salad on the side
