  • Bottle Gourd With Lentils ( Doodhi Channa )

    Ingredients

    • 4 Tbsp. sunflower oil I tsp. f ttmin seeds
    • 1 x tcaspoongingcrpaste I tsp. gar/ic paste
    • 4 Tbsp. gram lentils soaked [or possibly 30 min and liquid removed
    • 600 gm (1 66/b) bottle gourd (7aukV doodhi) skinned and diced
    • 10 Tbsp. tomato puree I tsp. turmeric pwdr I tsp. chill) pwdr I tsp. corianderpowdcr Salt
    • 150 ml ( IYpt) water I teaspoogaran masala pwdr

    Directions

    1. Heat the oil in a pan and add in the cumin seeds.
    2. When they pop add in the ginger and garlic pastes.
    3. Stir in the lentils and the gourd after a minute and fry well.
    4. Add in the rest of the ingredients except the garam masala cover and cook till the lentils are soft.
    5. Sprinkle the garam masala over and mix gently.
    6. Serve warm with poories.
    7. Here bottle gourd is combined with gram lentils in a classic north indian recipe. (Bottle gourds are available at all indian grocers ) This vegetable curry tastes very good with indian breads and pleasantly disguises the blandness of the gourd.
    8. Serves 4
