    Ukrainian Famous soup

    Ingredients

    • 1 Ham bone and drippings
    • 3 quarts water
    • 1 onion, chopped
    • 3 cups diced potatoes
    • 1 cup chopped carrots
    • 1/2 cup chopped celery
    • 1 bay leaf
    • 3 cups diced peeled beets and leaves
    • salt and ground black pepper to taste
    • 1 cup cream
    • 2 tablespoons dill

    Directions

    1. Simmer ham bone with water in a large soup pot for about an hour.
    2. Add onion, potatoes, carrots, celery, beets and bay leaf to the pot ; cook, stirring occasionally, until vegetables are tender, about 30 minutes.
    3. Reduce heat to low; add salt, and black pepper to taste.
    4. Add cream cream and serve.
    5. Any vegetables can be used in soup.
    6. Also any meat stock can be used, even broth and oxo cubes. For vegetarian no stock need be used.
    7. Milk may be used instead of cream ( not as good tasting)
