Boiled Mutton with Caper Sauce

- A Joint of Mutton
- 1Tbs salt
- 1 Bay leaf
- 1 Onion chopped
- Caper sauce
- 125 ml Capers
- 100 ml butter 3Tbs flour
- 375ml mutton stock
- 5ml lemon juice
- salt and pepper
Directions
- Take a joint of mutton and place in a pot on the fire or on top of the stove, add bay leaf and onion (the best is a cast iron pot over an open fire) cover with boiling water,After 30 mins cooking add salt then simmer until meat is tender. Be sure to cook slowly
- For the sauce
- Melt half the butter, add seasoned flour, and mix well. Slowly add stock to mixture. Gently bring to boil for a few minutes. Add lemon juice and remaining butter. Add Capers. Allow to stand for 15 min. Warm when required.
- Serve on Mashed Pototoes with a side of fresh geen beans
