  • Bob Talbert's White Chili

    Ingredients

    • 1 1/2 lb boneless, skinless chicken breasts, washed and patted dry.
    • 2 can (14 ounce. ea.) chicken broth
    • 1 jar (48 ounce.) great northern beans, with liquid
    • 1 lrg onion, minced
    • 2 tsp chopped fresh garlic
    • 1 can (3 ounce.) minced green chilies, with liquid
    • 2 tsp grnd cumin
    • 1 tsp grnd oregano green minced onion tops, shredded cheese tortilla chips (optional)

    Directions

    1. Bake chicken breasts at 350 for 30 min. Cut in pcs.
    2. In a large pot, pour small amount of broth. Add in onion and garlic and simmer till onion is wilted and warm. Add in the chilies, stir, then add in broth and beans with liquid. Fold in the cumin and oregano. Bring to a boil and add in chicken pcs. Cover and simmer for at least 30 min.
    3. (Serves 6)
