  • Blueberry Streusel Cake

    Ingredients

    • 3/4 c. sugar divided
    • 1/4 c. margarine softened
    • 1 lrg egg
    • 1 tsp lemon rind grated
    • 1 1/2 c. all-purpose flour
    • 1/2 tsp baking soda
    • 1/2 c. plain lowfat yogurt vegetable cooking spray
    • 1 Tbsp. all-purpose flour
    • 2 c. fresh blueberries
    • 1 tsp grnd cinnamon
    • 1/8 tsp grnd allspice
    • 1 tsp powdered sugar

    Directions

    1. Combine 1/2 c. sugar; and next 3 ingredients; beat at medium speed with an electric mixer 5 min. Combine 1 - 1/2 c. flour and baking soda; add in to egg mix alternately with yogurt, beginning and ending with flour mix. Pour batter into a 9 inch round tart pan coated with cooking spray., spreading proportionately over bottom and up sides of pan. Combine remaining 1/4 c. sugar, 1 Tablespoons flour, and next 3 ingredients, tossing gently. Spoon over batter, leaving a 1/2 inch border. Bake at 350 for 45 min or possibly till lightly browned; cold 20 min on a wire rack. Sprinkle with powdered sugar.
