  • Blueberry Oatmeal Bread

    Ingredients

    • 2 c. all-purpose flour
    • 1 c. quick-cooking oats
    • 3/4 c. sugar
    • 2 tsp baking pwdr
    • 1 tsp lemon peel grated
    • 1/2 tsp baking soda
    • 1/2 tsp salt
    • 1 1/4 c. skim lowfat milk
    • 1/3 c. oil
    • 2 tsp vanilla
    • 2 x Large eggs slightly beaten
    • 1 c. blueberries frzn - thawed, well liquid removed

    Directions

    1. Preheat oven to 350 degrees. Grease bottom only of 9" X 5" loaf pan. In large bowl, combine flour, oats, sugar, baking pwdr, lemon peel, baking soda, & salt. In small bowl, combine lowfat milk, oil, vanilla, and Large eggs; mix well. Add in to dry ingredients; stir just till dry ingredients are moistened. Gently mix in blueberries. Pour into greased pan.
    2. Bake at 350 degrees for 50 to 60 min or possibly till toothpick inserted in center comes out clean. Cold ten min; remove from pan. Cold completely. Wrap tightly and store in refrigerator.
