Blueberry French Toast

A fantastic easy little breakfast that can be made ahead and popped in the oven in the morning!

Ingredients

  • 2 Eggs
  • 1/2 cup Milk or Half and Half
  • 2 Slices Hawaiian Bread
  • 3/4 cup Blueberries
  • 2 Tbsp Butter
  • 2 Tbsp Splenda

Directions

  1. Preheat oven 375°
  2. In a microwave safe bowl place the butter, splenda and blueberries
  3. Heat on high for 1 minute.
  4. Pour mixture into baking dish
  5. (*I used a shallow, fluted baking dish)
  6. In a mixing bowl beat the eggs and the milk.
  7. Dip the slices of Hawaiian bread in the egg mixture.
  8. Place the bread on top of the blueberry mixture.
  9. Pour remaining egg mixture over top of the bread.
  10. Bake in 375° oven for 35-40 minutes or until golden brown and bubbly.
  11. Serve with a Dollop of Whipped Cream if desired.
