Ingredients

  • 1 1/4 c. Sugar
  • 2/3 c. Land O Lakes butter, melted
  • 1/4 c. Buttermilk
  • 2 x Large eggs
  • 1 tsp Vanilla
  • 3 med , ripe bananas, mashed
  • 2 c. All-purpose flour
  • 3/4 tsp Baking soda
  • 1/8 tsp Salt
  • 1 c. Fresh or possibly frzn blueberries Powdered sugar, if you like

Directions

  1. Heat oven to 350 . In large mixer bowl combine sugar, butter, buttermilk, Large eggs and vanilla. Beat at medium speed, scraping bowl often, till creamy
  2. (1-2 min). Add in bananas; continue beating till well mixed (1 minute).
  3. Add in flour, baking soda and salt. Beat at low speed till moistened (1-2 min). By hand, stir in blueberries. Spoon into paper-lined muffin c..
  4. Bake for 25-30 min or possibly till toothpick inserted in center comes out clean. Remove from pan. Cold. Just before serving, sprinkle tops of cakes with powdered sugar.
  5. Yields 20 snack cakes.
  6. NOTE: 1 tsp. lemon juice or possibly vinegar plus sufficient lowfat milk to equal 1/4 c. can be substituted for the 1/4 c. buttermilk.
