    Ingredients

    • DOUGH
    • 1 1/2 cup of warm water (105-115 F)
    • 1 tablespoon instant yeast
    • 3 tablespoons honey
    • 1 tablespoon olive oil
    • 2 teaspoon sea salt
    • 4-5 cups all-purpose flour
    • 1/3 to 1/2 cup frozen blueberries (or use fresh)
    • 1 egg white
    • sprinkling of corn meal
    • WATER BATH
    • 3 quarts water
    • 1 tablespoon honey
    • 1/2 teaspoon salt
    • 1 egg white thinned with 1 tablespoon water

    Directions

    1. Warm the mixer bowl, if cold. with hot water, rinse and dry.
    2. Measure the yeast into bowl.
    3. Add the 105-115 F water
    4. Let set to dissolve yeast for 5-10 minutes. It will bubble up.
    5. Add the honey, olive oil and 1 cup of flour mixed with salt.Stir at low speed.
    6. Blend briefly to mix,.
    7. Add the remaining flour while mixer is going
    8. Using the dough hook, knead at low speed for 10 minutes.
    9. Dough will be smooth and elastic.
    10. Roll into a large ball and put into a greased bowl.
    11. Cover and let rise 1 hour in warm place.
    12. {Prepare the water bath to boiling.
    13. {Preheat oven to 425 F.
    14. {Prepare baking sheet with parchment paper and lightly sprayed with oil, and corn meal sprinkled over paper.
    15. Punch the dough down.
    16. On a lightly floured board, roll into long log, divide into 10-12 equal pieces to make a 2- inch ball.
    17. Flatten the dough piece, add 3-4 blueberries in a circle.
    18. Fold the dough over the blueberries and seal on underside.
    19. Punch a hole in the middle with your thumb, making hole about 1-2 inches big.
    20. Set aside to rise while making the bagels
    21. Cover and let rise about 15 minutes until puffy.
    22. Drop into the seasoned water to boil. They will rise to top.
    23. Let simmer about 1 minutes each side.
    24. Lift out with skimmer.
    25. Set on the baking sheet.
    26. Brush with egg white and water.
    27. Bake 425 for 20 minutes, or until lightly brown, turn after 10 minutes and brown on the other side.
    28. Remove to rack to cool.
