  • Blue Ribbon Tamale Pie

    Ingredients

    • 2 slices bacon
    • 1 med. onion
    • 1 sm. clove garlic, chopped
    • 1 pound grnd beef
    • 1 (1 lb.) can tomato soup
    • 2 teaspoon chili pwdr
    • 1/2 teaspoon salt
    • 1/4 teaspoon paprika
    • 8 lg. olives
    • 5 green pepper rings
    • 1 1/2 c. whole kernel corn
    • 1 c. sifted flour
    • 1 c. cornmeal
    • 1 tbsp. sugar
    • 1 teaspoon salt
    • 3 teaspoon baking pwdr
    • 1 egg, beaten
    • 1 c. lowfat milk
    • 2 tbsp. melted shortening

    Directions

    1. In 10-inch fry pan, cook till crisp 2 slices of bacon, cut in half. Drain and reserve. Saute/fry 3 min in bacon fat 1 medium onion, minced, 1 small clove garlic, chopped. Add in and saute/fry till brown, 1 lb. grnd beef, broken up.
    2. Stir in and heat 1 can tomato soup, chili pwdr, salt, and paprika. Reserve meat mix in bowl.
    3. In fry pan, make wheel design with bacon strips, 8 olives, pepper rings. Carefully cover with corn. Cover corn with meat mix. Cover all with corn bread batter.
    4. Mix flour, cornmeal, sugar, baking pwdr and salt. Beat together 1 egg, 1 c. lowfat milk, sugar, baking pwdr, shortening and mix lightly in flour mix. Bake at 350 degrees for 25 min. 4-6 servings.
