  • Blue Cornmeal Chicken Wings

    Ingredients

    • 1/4 c. lime juice
    • 1/4 c. vegetable oil
    • 1/2 c. crushed red pepper flakes or possibly to taste
    • 10 x chicken wings (about 2 lbs)
    • 2 Tbsp. butter or possibly margarine
    • 1/2 c. blue or possibly yellow cornmeal
    • 2 Tbsp. unbleached all purpose flour
    • 1/2 tsp salt
    • 1/2 tsp grnd cumin
    • 1/8 tsp pepper

    Directions

    1. Mix lime juice, oil and red pepper flakes in a large glass bowl. Cut each chicken wing at joints to make 3 pcs; throw away tip. Cut off throw away excess skin. Place wings in oil mix; stir to coat. Cover and chill at least 3 hrs, stirring occasionally; drain. Heat oven to 425 degrees F. Heat margarine in rectangular pan, 13x9x2", in oven till melted. Shake remaining ingredients in plastic bag, or possibly fold in bowl. Shake wings in cornmeal mix to coat; place in pan. Bake uncovered 20 min, turn. Bake till golden, 20 to 25 min longer.
    2. Makes 20 appetizers. Flakes are not the same as red pepper and it can be as warm as you want it by adding more.
