Blue Cheese Potato Salad
Ingredients
- 4 slc bacon
- 2 lb red new potatoes
- 1/2 c. extra virgin olive oil
- 3 Tbsp. white vinegar
- 1 bn green onions minced
- 1/2 tsp salt
- 1 tsp grnd black pepper
- 1 1/2 ounce blue cheese crumbled
Directions
- Place bacon in a large, deep skillet. Cook over medium high heat till proportionately brown. Drain, crumble and set aside. Bring a large pot of salted water to a boil. Add in potatoes and cook till tender but still hard, about 15 min. Drain, cold and chop. leaving skins on.
- In a large bowl, whisk together the oil, vinegar, green onions, salt and pepper. Add in the potatoes, bacon and cheese and toss to coat.
- Makes 4 to 6 servings
