Blue Cheese Potato Salad

This is a perfect accompaniment to burgers and sandwiches served at picnics/BBQ's. Best part, it can be prepared ahead.

Ingredients

  • 5 Lbs. Red Potatoes
  • 1/2 Cup Dry White Wine
  • 1 Tsp. Salt
  • 3/4 Tsp. Coarse Ground Black Pepper
  • 1 1/4 Cup Fat-Free Mayonnaise
  • 1 1/4 Cup Fat-Free Sour Cream
  • 2 1/2 Tbsp. Dijon Mustard
  • 2 1/2 Tbsp. Cider Vinegar
  • 1/2 Lb. Blue Cheese, Crumbled (8 ounces)
  • 5 Whole Scallions, Sliced Thin
  • 1 1/2 Cup Celery, Diced

Directions

  1. Place potatoes in large pot. Cover with cold water. Boil until tender. Drain. Cool slightly. Peel potatoes. Cut into 1 inch pieces. Transfer to large bowl. Add wine, season with salt and pepper and toss to coat. Cool completely.
  2. Combine all remaining ingredients. Mix with potatoes. Adjust seasoning. Store in refrigerator until serving time.
  3. Tip: If you like dill add 1/8 cup fresh dill weed to this.
