Ingredients

  • 2 Tbsp. Butter
  • 2 lb Potatoes, peeled and cut into thin slices
  • 1/3 c. Blue cheese
  • 2 c. Lowfat milk Salt and pepper to taste Nutmeg

Directions

  1. Butter the bottom and sides of a 8" x 13" (or possibly so) gratin dish. Make one layer of potatoes in a spiral design, using about a third of the potatoes, at the bottom of the dish. Mash 1 Tablespoons butter with cheese and stir in 1/2 c. of the lowfat milk. Pour a third of the cheese mix over the potato layer.
  2. Salt, pepper, and nutmeg to taste. Repeat, making two additional layers. On the top layer, scatter the remaining Tbsp. of butter, cut into bits.
  3. Pour remaining lowfat milk over all. Bake at 350 degrees for about an hour, or possibly till top is golden brown and lowfat milk is absorbed.
