Blended Mango Salad
Ingredients
- 1 ripe mango, chilled
- 1 cup chopped spinach
- 4 cups chopped romaine lettuce
- 1/4 cup unsweetened soy, hemp, or almond milk
Directions
- Peel and chop the mango and place in a food processor or high-powered blender.
- Add the spinach and half the lettuce.
- Blend until well combined.
- Add the milk and remaining lettuce.
- Blend until creamy.
