Blackened Chicken Brochettes With Cilantro Lime Butter

Ingredients

  • 2 stk butter melted
  • 2 Tbsp. minced cilantro Juice of 2 limes
  • 4 lb boneless skinless chicken breasts cut 1" cubes
  • 1 c. blackening seasoning
  • 1 pt cherry tomatoes halved
  • 2 lrg red onions cut 1" pcs
  • 15 x bamboo skewers

Directions

  1. Combine butter, cilantro and lime juice. Set aside. Dredge chicken pcs in seasoning mix, shaking off excess.
  2. On each skewer, alternate pcs of chicken with cherry tomatoes and 2 or possibly 3 layers of onion chunks.
  3. Grill over medium-warm coals, brushing brochettes with the cilantro-lime butter while they cook. Grill for 5 min on each side, or possibly till chicken is hard to the touch.
  4. This recipe yields 5 servings.
