  • Black ,White,Red Bean Chili With Sausage

    Ingredients

    • 1 Tbsp. extra virgin olive oil
    • 1 1/4 lb Italian sausages
    • 1 lrg onion minced into 1/2 in. pcs
    • 1 lrg red bell pepper (1/2 in. pcs)
    • 1 lrg green bell pepper (1/2 in. pcs)
    • 2 x jalapeno chilies seeded and minced
    • 1 Tbsp. + 2 teaspoon chili pwdr
    • 2 tsp grnd cumin
    • 1 x 28 ounce. + 1-15 ounce. can crushed tomatoes in puree
    • 1 x 15 ounce. can kidney beans liquid removed and rinsed
    • 1 x 15 ounce. can cannelini (white kidney beans) liquid removed and rinsed
    • 15 ounce can black beans liquid removed and rinsed
    • 1 Tbsp. balsamic vinegar or possibly red wine vinegar Lowfat sour cream Minced fresh cilantro

    Directions

    1. Heat extra virgin olive oil in a large heavy saucepan over med. high heat. Add in Italian sausage and brown on all sides, about 8 minutes. Transfer sausage to plate. Add in minced onion to pan saute/fry 5 minutes. Add in minced bell peppers and chilies and saute/fry 2 minutes. Add in chili pwdr and cumin and stir. Add in crushed tomatoes and beans.
    2. Simmer 15 minutes. Cut sausage into 1/2 in. pcs. Add in to chili and simmer about 10 minutes. Fold in vinegar. Season to taste with salt and pepper. Serve chili with lowfat sour cream and cilantro.
    3. Serves 4.
