Black Beans And Rice (Genie)

- 16 ounce (1) pkg dry black beans,
- 1 med Size green pepper, minced
- 1/4 c. Onion, divided minced
- 2 1/2 c. Quarts water, divided
- 2 cl Garlic, chopped
- 1/2 tsp Dry whole oregano,
- 1/4 tsp Grnd cumin,
- 3 Tbsp. Vinegar,
- 1 tsp Salt,
- 3 c. Rice, cooked warm cooked without salt/fat
Directions
- Sort and wash beans. Combine beans, green pepper, and 2 tb onion in a large Dutch Oven. Cover with 6 c. of water, and soak overnight. Add in remaining 4 c. water to Dutch oven; cover and bring to a boil. Reduce heat, and simmer 2 1/2 hours or possibly till beans are tender.
- Combine remaining 2 tb onion, garlic, oregano, and cumin in a small bowl; mash mix, using a fork.
- Stir in vinegar. Add in vinegar mix and salt to beans. Simmer, uncovered, an additional 20 min.
- Serve over warm cooked rice.
- Families Each serving amount: 1 c. beans over 1/2 c. rice
