  • Black Beans And Rice (Genie)

    • Ingredients
    • 16 ounce (1) pkg dry black beans,
    • 1 med Size green pepper, minced
    • 1/4 c. Onion, divided minced
    • 2 1/2 c. Quarts water, divided
    • 2 cl Garlic, chopped
    • 1/2 tsp Dry whole oregano,
    • 1/4 tsp Grnd cumin,
    • 3 Tbsp. Vinegar,
    • 1 tsp Salt,
    • 3 c. Rice, cooked warm cooked without salt/fat

    Directions

    1. Sort and wash beans. Combine beans, green pepper, and 2 tb onion in a large Dutch Oven. Cover with 6 c. of water, and soak overnight. Add in remaining 4 c. water to Dutch oven; cover and bring to a boil. Reduce heat, and simmer 2 1/2 hours or possibly till beans are tender.
    2. Combine remaining 2 tb onion, garlic, oregano, and cumin in a small bowl; mash mix, using a fork.
    3. Stir in vinegar. Add in vinegar mix and salt to beans. Simmer, uncovered, an additional 20 min.
    4. Serve over warm cooked rice.
    5. Families Each serving amount: 1 c. beans over 1/2 c. rice
