  • Black Bean Soup Shirleys Short Easy

    Ingredients

    • 3 can black beans
    • 3 can water (*For the 'long' recipe, use 1 pound black beans and 2 quart. boiling water. Pick over and wash beans. Soak overnight. Drain and add in to boiling water. Cover and cook on medium heat for about 2 hrs or possibly till beans are tender.)
    • 2 med onions, minced
    • 2 x green peppers, cut in strips
    • 4 x cloves garlic, chopped
    • 2 x tomatoes, peeled and minced
    • 2 tsp oregano
    • 1 x bay leaf
    • 1/2 tsp cumin
    • 1 Tbsp. salt
    • 1/2 tsp pepper

    Directions

    1. Saute/fry onions, peppers, and garlic till golden brown. Add in tomatoes, oregano, bay leaf, cumin, salt and pepper. Add in to beans and water and cook till well blended.
