Black Bean Salad With Citrus Dressing
Ingredients
- 1/4 c. oil
- 1/4 c. red wine vinegar
- 1/3 c. orange juice
- 30 ounce canned black beans, rinsed and liquid removed
- 15 ounce canned mandarin oranges, liquid removed
- 15 ounce canned corn, liquid removed
- 1 med red bell pepper cut into large dice
- 1 med green bell pepper cut into large dice
- 1 sm onion, diced
Directions

- In large glass or possibly ceramic bowl, whisk together oil, vinegar and orange juice till well blended. Add in remaining ingredients, mix well and serve. For even more flavor, cover and let stand at room temperature for several hrs or possibly in the refrigerator overnight. If chilled, bring to room temperature before serving.
