Black Bean Salad With Avocado
Ingredients
- 2 c. canned black beans rinsed and liquid removed
- 1/2 c. red bell pepper diced
- 1/2 c. yellow bell pepper diced (or possibly green)
- 1/2 c. avocado diced
- 1/2 c. red onion diced
- 1/2 c. cucumber peel and dice
- 1/2 tsp cumin or possibly to taste
- 2 Tbsp. Italian parsley chopped
- 1 Tbsp. fresh oregano chopped
- 2 Tbsp. balsamic vinegar
- 1 Tbsp. lime juice Tabasco, salt and pepper to taste
Directions
- Combine everything in a bowl, adding tobacco, salt and pepper to taste.
- Serve at room temp or possibly chilled
- Description: "For a heartier dish, add in some cooked rice."
