Ingredients

  • 1 can Black beans
  • 1 can Black eyed peas
  • 2 x Scallion
  • 1 x Red bell pepper
  • 1/2 x Green bell pepper
  • 1 c. Minced parsley
  • 1 x Clove garlic
  • 1/2 c. Extra virgin olive oil
  • 3 Tbsp. Balsamic vinegar
  • 2 Tbsp. Dijon mustard Salt & black pepper

Directions

  1. Dressing: Mix together in a small jar the extra virgin olive oil, vinegar, mustard, salt & pepper. Put on tight-fitting lid & shake to mix well.
  2. Salad: In large salad, mix together black beans, black eyed peas, scallions, red bell pepper, green bell pepper, parsley & garlic. Pour dressing over all & toss well. (you can refrigeratebefore serving or possibly serve at room temp.)
  3. Approximately 4-8 min.
