Black Bean Salad

Ingredients

  • 1 stalk celery – chopped
  • 3 cloves garlic – chopped
  • ¼ red onion – chopped
  • ½ cup Italian parsley – chopped
  • 1 cup of mixed pitted olives – chopped
  • 2-3 red chili peppers – chopped
  • ½ tsp. salt
  • ½ tsp. black pepper
  • ¼ tsp. red pepper flakes
  • 8 oz. of your favorite macaroni or couscous
  • Dressing:
  • Juice of 1 lemon
  • 3-4 tablespoons olive oil

Directions

  1. Prepare beans as directed on package.
  2. Combine all of the ingredients for the salad with the beans in a large bowl.
  3. Add the seasonings to taste.
  4. Combine the ingredients for the dressing; add to the salad and toss.
  5. Prepare the macaroni or couscous as directed.
  6. Add to the bean salad and toss.
  7. Serve immediately or chilled.
