  • Black Bean & Rice Salad

    This is one of my favorite recipes and I came up with it by accident! I was supposed to be making a pot of black beans to serve with rice, but by the time I was done it had turned into something totally different. Hope you enjoy it as much as I do!

    Ingredients

    • 1 cup uncooked Rice
    • 1 can Black beans
    • 2 slices Bacon
    • 1 medium Onion
    • 2 cloves garlic
    • 1 medium red Bell pepper
    • Salt and Pepper, to taste
    • 1 medium Tomato
    • 2-3 Green onions
    • 2 tsp Rice Wine Vinegar, or to taste

    Directions

    1. Cook rice according to the package directions.
    2. Drain and thoroughly rinse the beans, set aside.
    3. Dice bacon and saute' in a non-stick pan until the fat has been rendered. Add onion, garlic and bell pepper. Saute' until the onion is tender. Drain to remove the excess bacon fat and add to the bowl of beans. Season with salt and pepper to taste.
    4. Dice the tomato and chop up the green onions with tops.
    5. Transfer the rice into a large bowl or pan. Sprinkle with the vinegar and mix thoroughly. Add the bean mixture, tomato and green onion; stir to evenly distribute through the rice.
    6. Garnish with parsley or cilantro, optional.
