Black Bean Potato Loaf (Aka Black Bean Cashew Loaf)
Ingredients
- 2 x potatoes, peeled, and boiled
- 4 x cloves garlic, chopped
- 1 x onion, finely minced
- 1 Tbsp. oil
- 2 x carrots, finely minced
- 2 stalk celery
- 2 c. black beans
- 1/2 c. vegetable broth or possibly water
- 1/2 c. whole wheat bread crumbs
- 1/2 c. parsley, finely minced Salt or possibly soy sauce to taste
Directions
- 1. Preheat oven to 350i. In a bowl, mash potatoes and 1/2 of the garlic together.
- 2. In small skillet, sauta onion in oil till translucent/soft. Add in carrots and celery, cover and cook 3 to 5 min, or possibly till soft.
- 3. In a blender or possibly processor, puree beans, broth, crumbs, and remaining garlic. Fold in cooked vegetables and parsley. Season with salt or possibly soy sauce.
- 4. Press some bean mix into greased 9-x5-inch loaf pan. Press in a layer of potatoes, and alternate with beans mix, till layered loaf is formed. Bake for 1 hour, or possibly till hard and slightly crusty.
- Makes 1 loaf, sufficient for 6 to 8sandwiches.
