Ingredients

  • 1 can black beans
  • 1 med ripe tomato, diced
  • 1/4 c. jalapeno slices (pickled are best for this dip)
  • 1/3 c. salsa
  • 1/2 c. shredded cheddar cheese
  • 1 bunch green onion - diced
  • lowfat sour cream
  • 1 tbsp cumin
  • 1 tsp chili pwdr
  • salt

Directions

  1. Heat beans over the stove; add in cumin, chili pwdr, and just a healthy pinch of salt. Once the beans are heated through, move to an oven-safe bowl. Top with cheese. Use broiler setting in the oven to heat the cheese.
  2. Once the cheese has melted, top with salsa, fresh tomatoes, jalapeno, and lowfat sour cream. Garnish with diced green onions. Serve immediately with tortilla chips.
  3. Makes sufficient, as an appetizer, for 3-4.
