Black Bean And Mango Salad
Ingredients
- 1 can tomatoes DelMonte Salsa style 1/2 ounce.)
- 1 can black beans (15 ounce.)
- 1/3 bag frzn white corn (16 ounce. size bag) or possibly yellow corn
- 2 slc red onion minced
- 1 x mango minced or possibly substitute peaches in a healthy pinch
- 1/2 tsp lemon Juice
- 1/2 tsp lime juice or possibly all lemon or possibly all lime juice Salt and fresh grnd pepper
- 1 tsp cumin fresh mint optional
Directions
- Drain and rinse separately in a colander the tomatoes, beans, and corn.
- Combine all of the above.
- Gently and thoroughly mix everything. I adjust the juice and seasonings to taste - these measurements are pretty close to my preference.
