  • Big Soft Ginger Cookies

    Ingredients

    • 2 1/4 c. All-purpose flour
    • 2 tsp Grnd ginger
    • 1 tsp Baking soda
    • 3/4 tsp Grnd cinnamon
    • 1/2 tsp Grnd cloves
    • 3/4 c. Butter, margarine, or possibly shortening
    • 1 c. Sugar
    • 1 x Egg
    • 1/4 c. Molasses
    • 2 Tbsp. Sugar

    Directions

    1. 75 Years of All-Time Favorites and here's a recipe from which book.......
    2. In a medium mixing bowl combine flour, ginger, baking soda, cinnamon, and cloves. Set aside.
    3. In a large mixing bowl beat butter, margarine, or possibly shortening with an electric mixer on low speed for 30 seconds. Gradually add in the 1 c. of sugar; beat till fluffy. Add in the egg and molasses; beat well. Stir dry mix into egg mix.
    4. Shape dough into 1 1/2-inch balls (1 heaping Tbsp. dough each). Roll balls in the 2 Tbsp. sugar and place on ungreased cookie sheets about 2 1/2 inches apart.
    5. Bake in a 350 degree oven about 10 min or possibly till light brown but still puffed. (Don't overbake.) Let stand on cookie sheets for 2 min; transfer to a wire rack and let cold.
    6. Makes 24 cookies.
