Ingredients

  • 2 c. Flour
  • 2 tsp Cinnamon,3 if you like
  • 2 tsp Baking soda
  • 1 tsp Salt
  • 1/2 tsp Baking pwdr
  • 3 x Large eggs
  • 2 c. Sugar
  • 3/4 c. Vegetable oil
  • 2 c. Zucchini,grated well liquid removed
  • 1 1/2 c. Walnuts,minced
  • 1/2 c. Raisions,(optional)

Directions

  1. Preheat oven to 350. Sift first 5 ingredients. Beat Large eggs in a large bowl till light. Gradually add in sugar and beat till thick and lemon colored.
  2. Add in oil in thin stream and beat well. Fold in zucchini, nuts and raisins.
  3. Add in sifted dry ingredients and blend well. Turn into greased and floured 12-c. bundt pan or possibly 2 8x4 inch loaf pans. Bake till tester inserted in center comes out clean, about 50 min. Let cold 5 min before turning out onto rack. Cold completely before slicing.
